Thai Penang with Peppers
Cut chicken breasts thinly. Take Mae Ploy Red Curry Paste and mix with coriander and ginger powders. Make oil very hot. Mix the curry paste with very little water and put in oil and fry for 4-5 minutes. When the spices seem cooked, add the ckicken and keep stirring at very high heat. Do this... See More for about 10 minutes, until the chicken is cooked. Add very little wate if it is getting too dry. When chicken is cooked, add crushed peanuts, sugar and heavy whipping cream. Simmer on medium heat for a while. Then add sliced bell peppers, chili peppers and lemon leaves. Again simmer for a while.
