Spanish Style Fries


Ingredients:

3 Russet potatoes
1 finely sliced onion
2 finely sliced chilies
garlic powder
chili powder
black pepper
salt

Slice the potatoes into fries (I used the v-slicer). Heat oil on high heat. Add fries after oil is hot. Take out fries when golden. Add the sliced onions (v-slicer again- look how thin the slices are... it took like 15 seconds!) to the oil. When onion is brown and crispy, add the chilies. Put the onions and chilies on the fries. Sprinkle with salt, pepper, garlic and chili powders.

Crispy Ginger Beef

This is the yummiest Chinese dish I've made. The sauce is delicious, you can use it with chicken, shrimp, beef, tofu, anything. Thanks to the recipe adapted from here.

Ingredients

Beef:
1/4 cup cornstarch
1/4 tablespoon salt
black pepper
12 ounces beef, preferably steak, very thinly sliced
1 quart oil for frying

Sauce:
6 tablespoons soy sauce
2 tablespoon rice vinegar
3 tablespoons honey
7 tablespoons granulated sugar
1.5 tablespoon chinese chile paste (the jar with the green lid)
1/4 cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves roasted garlic, chopped (raw can also be used but the roasted was very flavorful)
1/4 cup very finely diced onion
1/4 cup slivered green chilies

Directions
1.Heat oil in wok.
2.Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
3.Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside. If you want super crispy, fry two or three times. I fried twice.
4.Heat the wok again. Add 1 tablespoon of oil, and saute the onion and garlic until slightly brown. Add ginger and fry for 30 seconds. Add the other ingredients and stir. Finally, add the strips of fried beef and toss to heat through and coat with sauce. Add the chilies and stir for a few more minutes.
