Sticky Rice with Mango
Cook 2 cups of jasmine rice in rice cooker, with half cup sugar and adding one cup of coconut milk instead of one cup of water. Separately mix some more sugar and coconut milk. When rice is done, let it cool. Add the remaining coconut milk. You can also add some coconut icecream (I used Mexico Helados Coconut icecream). Chill and serve with chopped mangoes.

Baked Butter Chicken

Ingredients
1 kg chicken - without skin, boned and cut into bite-size cubes or strips
50ml vegetable oil
For the marinade
300g yogurt
1 tablespoon garam masala
2 teaspoons red chili powder
1 tablespoon coriander powder
1 teaspoon cumin powder
1 teaspoon dried fenugreek leaves
Juice from 1 fresh lime
Salt and pepper
For the spice mix
6-8 cloves
10-15 black peppercorns
2 bay leaves
1 teaspoon cardamom seeds
1 small cinnamon stick
For the butter sauce
500 ml chicken stock
Handful of almonds, 20-25, skinned and pureed to a fine paste
3 onions - finely chopped
2 teaspoon ginger-garlic paste
50g butter
3-4 tablespoons cream
Handful coriander leaves, chopped
Method
In a large bowl mix all the ingredients for the marinade and mix to incorporate. Add the chicken pieces and coat well. Cover and refrigerate overnight. For the spice mix, dry roast all the spices in a small pan. Finely grind in grinder, food processor or using a pestle and morsel. Set aside.
Pre-heat oven to 200 degrees C. Heat the oil in a non-stick pan and sauté the onions with the ginger-garlic paste until the color takes on a golden color. Add the chicken pieces, reserving the marinade, and pan-fry until the meat turns opaque. Stir in the dry spice mix to the chicken and mix well, then transfer everything into your Römertopf, roasting tin or ovenproof dish. Pour in the chicken stock, cover tightly and bake in the oven for 30-40 minutes until the chicken is tender. Stir in the reserved marinade and bake for a further 15 minutes. Reduce the heat of the oven to 150 degrees C and finally add the almond paste, butter and cream. Put back into the oven and let simmer for 10 minutes. Garnish with coriander leaves and serve with fresh rotis, naan or steamed rice.
Spicy Cilantro Chili Rubbed Chicken
Chop a handful of cilatro and 3-5 green chillies in food processor. Add ginger, garlic, cumin, black pepper powders and sheekh kabab and chicken tikka masala to the food processor. Mix again. Use as much ingredients as you like- you can't go wrong... for me it's the more the better... but can get spicy if you add too much.
Rub half of the masalas, ... See Moresalt, and a dash of vinegar on the chicken and let it marinate. Make slashes on the chicken with a knife so the spices go in. I marinated only for 15 minutes and it turned out pretty good.
Heat oil in pan. Put the chicken in and fry at high heat. The spices will start to burn slightly. Keep stirring. Then about one cup of water. Cook on medium heat 35-40mins. Make sure chicken is done.
Sauce will have thickened... add the rest of the spices... stir... DONE!

Chicken and Shrimp Fajitas
Beat two chicken breats with meat mallet to make thin. Marinated with Shan Tandoori Chicken spice only. Then grilled 10 mins on George Foreman Grill. Then sliced into fajitas.
Separately marinated shrimp with Shan Tikka Boti spice and grilled for 3 mins.
Separately grilled onion and bell pepper slices in the grill for 4 mins.

Giant Chicken Patties
I made the chicken filling same as in Chicken Patties recipe. You can also fill with cooked minced meat, or anything else you like. Mince chicken breasts in a food processor. I used two pieces. Heat oil and fry the minced meat. Add ginger powder and black pepper. Add sliced onions, cilantro and green chilies. Add dash of cinnamon powder (if you like the flavor). Add salt. Fry till chicken is cooked. Add about 1/4 cup of water and sprinkle with about 2/3 tablespoons of flour to make the mixture stick together. Turn off heat and let cool.
Then took Puff Pastry Sheet from Pepperidge Farm (found in walmart freezer). Thaw the sheets first. One box has two sheets. Put parchment paper on baking tray. Put one sheet of puff pastry. Then put the filling. Cover with the second puff pastry sheet. Press sides to seal.
Beat one egg. Brush on the beaten egg on top of sheet to make it shiny.
Bake at 400 F for 25 mins.
I made the little balls on top using some pastry sheet dough that I tore from the corners.

Grilled Tilapia
I rubbed the fillet with salt, pepper and paprika on either side and kept it sitting for an hour. Lightly brushed the George Foreman grill with oil and grilled the fillet for 2 mins. Then sprinkled with crushed red pepper and chopped cilantro.
I like it better grilled... but baked is also good. Some lemon zest and juice would be nice too- too bad I didnt have any!
Angus Steak Burger and Fries
marinated angus steak patties with salt, pepper, paprika and hickory smoked bbq sauce.

then melted pepperjack cheese on the patties, using the float setting on the grill for about 30sec.
put the grilled onions and peppers on the cheese. applied some mayo and bbq sauce on the buns.
for the fries, cut potatoes, fried them in oil. seasoned with paprika, cumin, salt and pepper.
Tandoori-Shikh Chicken Kababs
Marinated cubed chicken breasts with Shaan tandoori and shikh kabab spices, lemon juice, vinegar, ginger and garlic powders for an hour. Put in the heated George Foreman Grill for 10mins- DONE! Tasted just like it was grilled outside in charcoal!

Corn Soup
Take two cans of Chicken Broth. Stir in 2-3 tablespoons of cornstarch until it dissolves. Heat. Keep stirring. Add sweet corn, salt, sugar and black pepper. Keep stirring and bring to a boil- soup will become more clear.
In a bowl, beat two eggs. When soup comes to a boil, lower heat and drop teaspoons of beaten egg on the soup. Add the egg slowly stirring occassionally so you have thin strands of egg. Cook for 2-3 minutes more. Enjoy!
You can add soy sauce, hot sauce or chili-soaked-vinegar if you like.
Potato Yogurt Curry
Dice potatoes, add red chili, ginger, garam masala, cumin and coriander powders to the potatoes and mix.
Heat Nigella (Kalo Jeera) in oil. Add the spiced potatoes. Stir in high heat until the spices are cooked. Add salt. Add some whipped yogurt. Cover and cook until potatoes are done. Add water intermittently if its getting too dry, but don't add too much water at once.
Best with tortillas for breakfast.

Drunken Thai Noodles
Heat oil and then add Mae Ploy Penang Curry Paste. I used about 3/4 cup of paste, you can add less if that's too spicy. Stir in high heat. Add sliced chicken breasts. Keep stirring at high heat until chicken is cooked. Add red onions, red chilis. Add some thai basil (optional).
Boil water in a separate pot and cook noodles according to instructions... See More on box. Add one or two cups of the boiled noodles water to the paste. Drain the rest of the water from the noodles. Add the noodles to the paste and stir. You can keep it very wet or heat until it is dry enough.
You can also do this with shrimp.

Cilantro Chicken Chili Eggrolls
Mince chicken, cilantro and chilis. Mix, add salt, black pepper, ginger, garlic, paprika, chili powders. Fry in oil until chicken is done. Put in eggroll sheets, wrap and fry. Serve whole or cut in a slant with sweet chili sauce.
Chicken Lollipops
put fresh bread slices in the oven at 300F, turning occasionally, until dry. put in blender or food processor to make crumbs.
mince chicken breasts in food processor. add chopped chilies, cilantro and onions. add paprika, garlic powder, black pepper, crushed red pepper, salt, red chili powder. mix.
coat with breadcrumbs and fry. insert toothpicks and serve with sweet chili sauce!

Fuchka (Shells with Chickpea Salad and Tamarind Water)
I made it the shortcut way. Easy to make if you buy the shells.
I got two cans of garbanzo beans, boiled to make them soft. Added salt, chaat masala, onions, chilies, cumin powder, cilantro. Add sliced boiled eggs and diced boiled potatoes (optional). Mash the chickpeas a little bit.
Separately, soak tamarind in water. Mash the tamarind in water. Add Bit Lobon (Rock Salt), Salt, Sugar, Jeera, Crushed Red Pepper. Taste to adjust amounts.

Cajun Chicken Pasta
Cook penne pasta according to the instruction on the box. Drain and set aside.
In a large pan melt some butter. Add paprika, red chili powder, garlic, black pepper, and cumin. Stir spices. I added garlic alfredo sauce. I use Classico Roasted Garlic Alfredo Sauce. Stir and simmer for 2/3 minutes. Then add the pasta.
Chicken Patties (Chicken in Puff Pastry)

Add dash of cinnamon powder (if you like the flavor). Add salt. Fry till chicken is cooked. Add about 1/4 cup of water and sprinkle with about 2/3 tablespoons of flour to make the mixture stick together. Turn off heat and let cool.
Buy Puff Pastry Sheets. I use the Pepperidge Farm one. The pepperidge farm sheets make nine patties. Let thaw and then cut into squares. Take each square, put chicken filling and cover with another. Press sides to seal.

Grease a baking tray with oil. Put the patties on the tray. Beat one egg in a bowl. Apply the beaten egg on the patties with a brush. Bake for 25-30mins.

Fried Couscous
I used a box of Far East Original Couscous and cooked it following directions on the box.
Then fried onions, green and red chilies, peas and corn in oil. Sprinkled with salt and pepper. Added beaten eggs and stirred. Then added the couscous. Fried for few more minutes, added soy sauce and stirred.

Tehari (Rice with Beef)
It's Siddika Kabir's Tehari with some changes. Cut beef into small pieces. Put in onion, ginger, garlic, turmeric, chili, coriander and cumin pastes and mix. Add salt. Put on stove with some water. I cooked it for about an hour to soften the meat.
In a large pot, fry onion slices. Add cinnamon, bay leaves, cloves and cardamom. Add some cumin seeds and shahi jeera. Fry for a few minutes. Add the meat with the spices and stir at high heat. After koshano, pick out the meat pieces and set aside.
Take basmati or kalojeera rice. Wash and soak in water for about 10mins, then drain. Put the rice in the masala from the beef. Fry for a few minutes. Then add water (2cups for 1cup of rice). Add salt and rose/kewra water. When the water comes to a boil, add the meat and slivered green chilies. Cover and cook on medium low heat for 20mins.

Fried Rice
1. Make 3 cups of Basmati Rice in the Rice Cooker. When done, turn off and stir lightly with a fork to make rice fluffy.
2. In a large wok, heat oil. Put in mixed vegetables. I put in 3/4 of a small bag. Stir fry at high heat for 4-5 minutes. Add sliced green chilies and largely diced onions. Stir fry for 2-3 minutes. Add the cooked rice and keep stirring at high heat for 4-5 minutes. Sprinkle salt to taste.
3. Beat two eggs in a bowl and add 3-4 tablespoons of soy sauce. Add half the mixture to the rice and stir. When incorporated, add the rest and stir. This will give the rice a yellowish color and add flavor. Keep cooking for 4-5 minutes more. Sprinkle some black pepper (optional).... See More
This is one style of fried rice, you could also add eggs after frying the veges towards the beginning and stir and add the soy sauce at the end. That would leave large pieces of eggs whereas this leaves none.

Beef Chili Dry
Heat oil. Put in sliced red chilis and whole black/white pepper. Fry for a few minutes. Add minced beef and add ginger, garlic, paprika, red chili, coriander powder. Stir fry at high heat till the meat is cooked.
Add Schezuan stir fry sauce, soy sauce, sweet chili sauce, and few drops of liquid smoke(available in the sauce isle- adds a smoky flavor). Add salt and sugar to taste.
Shrimp in Caramelized Onions
Take shrimp and add cumin, coriander, ginger, chili, turmeric, salt, black pepper and mix well. Marinate for 30minutes. Then fry in oil till golden. Remove shrimp and set aside.

Take the shrimp fry oil and put in the spiced onions. Add a tablespoon of sugar and a teaspoon of salt. Keep stirring at medium heat. Do this till the onions are soft and brown. Then add the shrimp and cook for another 7-10mins.

Mutton Rezala II (Mutton Stew II)
Mix Goat Meat with yogurt, chili, turmeric, cumin, coriander, garam masala, ginger and garlic powders. Add oil and salt. Cover and cook on medium heat for 45-60mins. Add water if necessary.
When meat is cooked, add rose/kewra water and sugar, and stir at high heat. Sprinkle with garam masala, chili and cumin powders. Add green chilis and cover and cook on low heat for 30minutes.

Dim Korma (Egg Yogurt Curry)
Arpita Bala's Recipe with some changes:
Boil eggs. Cool and take off shell. Make etch marks on egg with fork.
Heat oil and ghee. Put in onion paste. Fry till golden. Add cinnamon and cardamom. Add whipped yogurt and keep stirring. I added some ginger powder and paprika powder for color- very little. Add sugar, kewra and rose water and heavy whipping cream.
Add eggs. Put in green chilies. Cover and cook on low heat.

Doi Begun (Eggplant in Yogurt)
I used Sharmin Hoque's recipe:
Slice eggplants 0.5 inches thick. Coat eggplant roundels with salt, chili and turmeric powders. Set aside for 30mins or so. Fry the eggplant.
Take plain yogurt with some water. Add cumin powder, chaat masala, black salt, chopped cilantro, garam masala powder, sugar. Mix well together.
Arrange the fried eggplants on a dish and pour the yogurt mix over.

Moist Chocolate Cake
This is a Hershey's recipe:
Ingredients:

1/2 cup HERSHEY'S Cocoa
3/4 teaspoons baking powder
3/4 teaspoons baking soda
0.5 teaspoon salt
1 eggs
0.5 cup milk
1/4 cup vegetable oil
1 teaspoons vanilla extract
0.5 cup boiling water
Directions:
1. Heat oven to 350°F. Grease and flour a 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.
Onion Pakora (Onion Fritters)
Slice a large onion very thinly- but keep the slices long. Julienne green chillies. Chop cilantro.
Separately take 1 cup of all purpose flour and 1 cup of gram flour. Add a pinch of baking powder and salt to taste. Add whole cumin seeds and ginger powder. Mix together. Then add the cut up onions and chilies to the dry ingredients and mix. The moisture in the onion will help and sprinkle more water if needed. Don't add to much water. The batter will be dry and crumbly- just as long as it sticks together.
Then take lumps and deep fry. Let some onions and chilies stick out.

Lazy Girl's Haleem (Lentil and Meat Curry)
This is made using Radhuni Haleem Mix. Fry onions, set 2/3 aside. In the onion fry, put in the meat and haleem masala. Cook on high heat for 4-5 mins then add water, lower heat and cook meat for 1.5 hours. Separately, soak the grains and pulses in two cups of water for about 30mins. When meat is done add the pulses. Cook on high heat for a few mins then lower heat and let simmer, stirring occasionally.

Garnish with strips of ginger, set aside fried onions, chopped chillies, cilantro, lemon juice.

Chicken Pita Pockets
Dice 2 Chicken Breasts and put Shaan Sheekh Kabab Masala and marinate for an hour. Heat oil in a pan, put in chicken and fry on high heat till Chicken is done. Dice some bell peppers and put it in the chicken.
To make the sauce: mix one small container of plain yogurt, pinch of salt, black pepper, chopped mint, cilantro, one grated cucumber, one ... See Moretablespoon olive oil.
Get pita pocket breads, cut in half to make pockets. Heat the breads on the oven at 350 for about 5 mins. Then stuff in chicken and sauce. You can also add sliced red onions.

Kacchi Biryani (Rice and Mutton)
Mutton/Goat/Lamb 2 kg
Basmati Rice 1 kg
Clarified Butter/Ghee 3/4 cups
Potatoes 3 large
2 onions sliced
Ginger paste 2 tablespoon
Garlic paste 2 teaspoon
Radhuni Biryani Masala Mix 1/2 pack
Ground Cumin 1 tablespoon
Crushed Red Peppers 6
Yogurt 1 cup
Red and Yellow Color slight
Rosewater 2 tablespoons
Kewra Water 2 tablespoons
Salt 2 tablespoon
Oil 1/2 cup
Wash meat, put salt and keep for 30minutes. Wash again.
Mix color and coat potato pieces with it. Then fry the potatoes till brownish in oil. Set aside.
In the potato fry oil, fry onions till brown in ghee and set it aside. Crush the fried onions when cool.
Take meat in the dish you will cook in, add ginger, garlic, onion, cumin, Radhuni spice, yogurt, rose and kewra water and mix well. Put potatoes on top of meat. Put the onion fry oil.
Wash and drain the rice. Boil 12 cups of water, add salt and add rice to it. As soon as rice starts boiling, pour the water in another pot and keep it. Take one cup of water from the rice water and put 0.5 cup of ghee in the water and put this in the meat and mix. Then spread the rice over the meat. Mix the rest of the ghee with the rice water and put the water in the pot so that the water is in level with rice, not below or above. Cover it with aluminum foil. Take the food color remaining from potatoes and put 4/5 spoonfuls of colored water in a scattered way.
Heat oven to 350 Fahrenheit . Keep in the oven for 3 hours. Sometimes the rice near the top dries up too much. After 2 hours of cooking, I flipped rice on top with the rice below. Be careful not to mix up the meat layer though.
This makes for 8-10 people.

Cheesy Crustless Quiche
3 eggs
1 cup whole milk
1/2 cup heavy whipping cream
1/2 cup shredded parmesan cheese
1/2 cup fiesta blend cheese
2 sticks of mozzarella string cheese, chopped
2 slices of American cheese, chopped
Chopped Cilantro
Chopped Tomatoes
Chopped Green Chilies
Chopped Red Onions
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Add any vegetables you like
Beat eggs. Add milk and heavy cream. Beat well. Add the paprika, salt, pepper and garlic powder. Add all the other ingredients.
Grease a Pyrex pan with oil. Heat oven to 350. Pour mixture into pan and bake 30-35 minutes. Keep checking every 10 minutes to make sure it's not getting burnt. If the top is not brown, increase the heat to 425 and bake for an extra 5-10 minutes. Check center with toothpick to see if done.
Jhal Beef (Spicy Beef Curry)

Heat oil and put 1 teaspoon of whole methi. When the methi starts sputtering, add onion paste and fry till golden. In a bowl mix chili, cumin, coriander, turmeric, ginger, garlic and garam masala powders and mix with water to make paste. Add this paste to the onion fry and fry for 5-10mins. Then add the meat and fry for 5-10mins. Add salt and little water if needed. When meat is 3/4 cooked, add potatoes. Cover and cook till done. Add some cumin and coriander powder and stir. It's ready to serve.
Fruit Cake
I took Sam's Club er Tropical Trail Mix and chopped it up in the food processor. Then took Betty Crocker Carrot Cake mix- you can also do with any cake mix. Mix the cake as instructed on the box. Then put in the chopped fruits and nuts. Bake following the instructions on the box.
Then cut the cake in half. I used Betty Crocker Butter Cream ... See Morefrosting. Apply a thick layer of icing on top of the bottom layer, put the top layer on and ice the whole cake. Then sprinkle almonds and chocolate shavings or anything you like.
Cranberry Achar (Cranberry Pickle)
Take three cups of halved cranberries, 10-15 chopped red chillies, ginger powder to taste, 1/3 cup vinegar, 1.5 cup sugar, 1 tablespoon salt. mix everything together and put on heat. stir occassionally. the sugar will release water. take off from heat when syrup becomes thick. you can use chopped ginger also- i used powder since i didn't have any at home.

Chicken Kofta (Chicken Meatball Curry)
Take ginger, garlic, cumin, coriander, chili, turmeric, garam masala and tomato puree and mix. Heat oil and fry onion paste. Then add these spices and fry until oil and masala separates. Add very little water if needed and keep stirring at high heat. Then put in the chicken balls and keep frying. Then add about 1.5 cups of water and let simmer. Keep as much gravy as you like. Cut the Cornish Chicken into small pieces. Add oil to pan and add the chopped onions and cumin seeds. Fry till onion is browned. Make paste with all the powdered spices or use paste if you have it. Add the spices to the onion. Fry for a few minutes. Then add the salt and the chicken and keep stir frying on high heat. Add the tomato paste. Keep stirring. Chicken will cook up as you fry on high heat. Add some water when needed, but not too much. When chicken is cooked, add ketchup and sprinkle with little sugar. Keep cooking for a few more minutes. Then add cilantro and it's ready!

Pumpkin Squares
CRUST:
1 pkg. yellow cake mix... See More
1/2 c. butter, melted
1 egg
Grease bottom only of a 9 x 13 inch pan. Empty cake mix into bowl and measure 1 cup and put aside for topping. Add butter and egg (beaten) to mix in bowl. When mixed like pie dough, press firmly into pan.
FILLING:
2 eggs
1 (1 lb.) can pumpkin
1/2 tsp. vanilla
1/8 tsp. cloves
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. ginger
2/3 c. evaporated milk
Prepare filling by beating 2 eggs slightly. Add milk and then remaining ingredients. When smooth pour over crust.
TOPPING:
1 c. reserved cake mix
1/4 c. sugar
1 tsp. cinnamon
1/4 c. butter
Prepare topping by cutting together the listed ingredients and then pour over filling. Bake at 350 degrees for 45 minutes or until knife comes out clean. Cut into squares and serve with whipped topping.

• 1 cups White sugar (divided)
• 5 Eggs
• 1-½ teaspoon Vanilla extract (divided)
• ½ of a 14-ounce can Sweetened condensed milk
• ½ of a 12-ounce can Evaporated milk
• 1-½ cups Heavy (whipping) cream
Preheat oven to 350F degrees. Grease and flour a 9x13-inch baking pan.
Put flour and baking powder together and set aside. Cream the butter and 1 cup of the sugar together until fluffy. Add the eggs and 1/2 teaspoon of the vanilla. Beat well. Add the flour mixture to the butter mixture, 2 tablespoons at a time, mixing well until blended. Pour batter into prepared pan. Bake for 30 minutes.
When cake has finished baking, pierce it in 8 or 10 places with a fork or skewer, and let it cool. Combine the whipping cream, evaporated milk, condensed milk and pour over the top of the cooled cake. Refrigerate for at least 2 hours before serving.
Sweet and Spicy Salad
Cut lettuce into thin shreds. I used iceberg and romaine lettuce. Chop cilantro. Thinly slice roma tomatoes or cut grape tomatoes in halves. I used a pickled jalapeno in a bottle called "Trapper's Sweet and Hot". Add some of the vinegar from the jalopeno jar. Mix all of that together. Pour Kraft's Zesty Italian Dressing and Sugar. Mix. It turns out really good!

Egg Curry
First make onion paste or fine dice. Heat oil and add the onion and keep stirring on high heat. Wait till it's brown. In a bowl, take one teaspoon each of red chili, turmeric, ginger, garlic, coriander, cumin powders with little water to make a paste. Then add the spice paste to the browned onions and keep stirring on high heat. If it dries up too much, keep adding tablespoons of water- but don't add to much to make it watery. Add salt. Do this for about 10 mins, till oil and spices separate as in picture.
Separately, boil water then add eggs. I leave eggs for 30mins to be safe. Then add the eggs to the cooked spices. Put in some cilantro and green chilis. Keep on low heat for 20-30mins.

Jalopeno and Pepper Chicken
Slice chicken breasts thinly. put salt, red chili, ginger, garlic, coriander, paprika and cumin powders and keep for an hour or so. Then put oil in a pan and fry the chicken at high heat. It'll turn a golden reddish brown. Slice jalapenos and bell peppers. And add to the chicken when chicken is cooked. Also make a sauce with orange juice, tomato ketuchup and sugar. Pour on chicken. Cook for 3-5 mins more.
